Gingerbread Men
Mixture is fairly thin when rolled out so take care when lifting the biscuits with a spatula or broad knife. About 20 Men depending on size.
You will need:
125g (40z) butter
1/2 cup sugar
1 egg yolk
2 cups plain flour
1 teaspoon bicarbonate of soda
3 teaspoons ground ginger
2 1/2 tablespoons golden syrup
currants
glace cherries
assorted sweets
Royal Icing:
1 1/4 to 1 1/2 cups of icing sugar
1 egg white
2 to 4 drops lemon juice
Recipe:
1) Warm golden syrup first. Measure into a small heatproof jug(remember spoon levels are level), stand jug in a heatproof dish or saucepan of hot water until syrup warms and softens. Cream butter and sugar until creamy, add egg yolk, beat well. Gradually add sifted dry ingredients and warm syrup, mix well.
2) Knead mixture lightly, roll out to 3mm (1/8inch) thickness on lightly floured board.
3) Cut out shapes, lift carefully and to lightly greased oven trays. Trimmings can be used for hats. Press in currants for eyes, glace cherries for noses. Bake in moderate oven 15 minutes; cool on trays.
When cold, decorate biscuits with coloured sweets for mouth and buttons secured with a little jam or make Royal Icing. Fill it into a small plastic bag and snip off the corner so that it makes a piping bag. Pipe mouth and features on to Gingerbread Men with the Royal Icing.
