ISO: Help - Husband Sick of Sandwiches

My husband works shift work and is out in the field a lot. I need some ideas for recipes that can be eaten cold, since he never knows if he is going to be close to a microwave. One sidenote....he doesn't eat chicken. Can someone give me some ideas?
