ISO: Help with Muffins

I would like help with making muffins from scratch. I have been experimenting with blueberry muffins and using the basic muffin recipes, which call for 2 cups of flour, etc. The muffins are very light and sweet but I am not happy with the "floury" taste. I want more of a "cake-like" taste instead of floury.

Any suggestions would be appreciated.
