ISO: home from Hawaii & searching for a recipe

Just home from the most marvelous vacation to Hawaii with my 3 bachelor sons. This was my grand prize trip I won from Kelloggs/Keebler to the ProBowl.
On our second night in Waikiki we dined at Tiki's Grill & Bar adjoining our hotel. DS (Ryan) ordered the Aloha Friday Hawaiian Plate, which was accompanied by mashed Hawaiian (purple) sweet potatoes that had coconut in them. He is still raving about those sweet potatoes! Anyone have a T&T recipe for mashed sweet potatoes including coconut? I had a tiny forkful & they were delicious!
We all just fell in love with our island atate & will be saving pennies for a return trip.
We even returned home with a little of the prize money leftover to help pay taxes on my win : )
