Recipe: Flavored Brush-On Butters (blue cheese, Cajun, fennel, lemon-basil and Parmesan)
Herbs and SpicesBARBECUE BRUSH-ON BUTTERS
Mix ingredients for each butter together well. Spread or brush on foods before and during cooking.
BLUE CHEESE BUTTER
Serve with meat or baked potatoes.
1/4 cup butter or margarine, softened
1/2 tsp lemon juice
1/4 tsp Worcestershire sauce
1/8 tsp ground black pepper
1/4 cup crumbled blue cheese
Add lemon juice, Worcestershire sauce and pepper to butter; mix well. Fold in blue cheese and mix just until combined.
CAJUN BUTTER
Serve with poultry.
1/4 cup butter or margarine, softened
1/2 tsp dried oregano
1/4 tsp ground cumin
1/8 tsp dried thyme; crushed
Dash ground red pepper (cayenne)
FENNEL BUTTER
Serve with fish.
1/4 cup butter or margarine, softened
1 tsp fennel seed
1/2 tsp lemon juice
Dash ground black pepper
LEMON-BASIL BUTTER
Serve with meat, fish or vegetables.
1/4 cup butter or margarine, softened
1/2 tsp lemon peel, finely shredded
1/2 tsp lemon juice
1/4 tsp dried basil, crushed
PARMESAN BUTTER
Serve with vegetables.
1/4 cup butter or margarine, softened
1 tbsp grated Parmesan cheese
2 tsp snipped fresh parsley
1 small garlic clove, minced
