ISO: How do I preserve beef stew

Hi. I want to make beef stew, chicken with noodles, clam chowder, etc. (already know how to do that)and preserve it in Mason jars or similar to keep 3 or 4 months without refrigeration (don't know how to do that). It will be for camping trips this summer.

If I sterilize the jars and get the stew boiling just before filling the jars, will that work or is there anything else I need to do? Are there certain ingredients to be avoided?

I realize this is potentially dangerous with regard to food poisoning, so I want to be extra careful and get all the facts before I try it. Any help will be greatly appreciated. Thanks in advance.
