SOUTHWESTERN PINTO BEANS
2 1/2 cups pinto beans
1/2 lb. bacon, cut up
2 cups (2 medium) chopped onions
3 garlic gloves, minced
2 cans (8 oz. each) tomato sauce
2 to 3 Tbsp. chili powder
1/2 tsp. oregano leaves
1/2 tsp. salt
1/4 tsp. ground black pepper
1/8 tsp. ground cumin
Soak beans using one of the methods directed below; do not drain. Cover; simmer beans for 3 to 3 1/2 hours until tender.
In large skillet cook bacon, onions, and garlic over medium heat until bacon is crisp. (Do not drain.)
Add bacon mixture, tomato sauce, chili powder, oregano, salt, pepper, and cumin to beans; stir well. Simmer, uncovered, an additional 20 to 30 minutes.
OVERNIGHT SOAK:
Place beans in large deep pot. Add enough water to cover beans by 2 inches. Let soak overnight or at least 6 to 8 hours.
QUICK SOAK:
Place beans in large deep pot. Add enough water to cover beans by 2 inches. Bring to boil; boil 2 minutes. Remove from heat; cover and let stand 1 hour.
Makes 8 servings (3/4 cup each)

If you have the time, look up as much info as you can find on the history of Jack Rabbit from Saginaw, MI. I found it interesting and sad to see historic symbols moving from their birthplace. Since I'm a 1 finger typist I'll post the Hot Dog Bean Soup when I'm sure this is posted as expected. Enjoy.
