ISO: How to convert bakery recipes found

I found recipes from my grandfather's bakery that I would love to try. the problem is that they are for large quantities (ex: 20 dozen cookies, 10 loaves bread, etc). The recipes are for cakes, cookies, breads and danishes. I would love to try these recipes. How can I convert these into manageable portions for our family? Is their software I could try or do I just need to use trial and error? Thanks for any input. :)
