SPICY CHICKEN WITH APRICOT GLAZE
1 package (about 4 pounds) chicken pieces, skin removed
1 teaspoon ground cayenne pepper
1/4 cup paprika
4 teaspoons salt
1/4 cup ground black pepper
FOR THE JAM GLAZE:
1 (18 ounce) jar apricot jam
3/4 cup tarragon vinegar
Preheat grill to high.
In a small bowl, mix together cayenne, paprika, salt and pepper. Rub all over chicken pieces.
Prepare grill to cook indirectly. Place chicken on grill over indirect high heat.
In a small bowl, mix jam and vinegar. Baste chicken frequently with jam glaze (do not use glaze on chicken for last 10 minutes of cook time). Grill about 55 minutes or until a meat thermometer inserted into the thickest part of a breast reaches 170 degrees F, and a thigh reaches 180 degrees F.
