ISO: IButternut Squash Enchilada from Cactus in Kirkland Washington

I have tried to replicate this recipe and found that the missing link is the mole sauce they make. It's magical and pulls the dish together. Please help me find their mole recipe so I can taste this again. I moved to another state and even when I did a return visit it wasn't on the menu anymore.
