ISO: Looking for Recipes for a Coffee House

I am putting together a business plan to start a coffee house and want to make my own bakery items (cookies, muffins, scones, cheesecakes). I got on-line to find recipes and found this site! I can't tell you how excited I am to talk. I have the recipes Sharon at NC sent. I am anxious to try them. Is it necessary to have a convection oven?

I want to serve 4-5 breakfast items (all day). Does anyone have any great egg or crepe recipes? I'm also looking for cookies and scone recipes! I made scones and found them dry and not very sweet. There must be a better recipe out there for scones. Any help would really be appreciated.
