ISO: LowFat Hush Puppies & Choc. Muffins

I have 2 requests. I am in search of two things.
Hopefully someone here at Recipelink can help me out.

1)I saw somewhere a recipe for Baked Hush Puppies. I can't find it anywhere. I've searched high and low and it can't be found. Does someone have a recipe that is imilar - hush puppies that are formed and then baked in the oven? I really need it for next week.

2) A month or so ago, my DH and I were at a shopping center and they had a My Favorite Muffin store. We went in looking for cappuccino and saw they had a chocolate cappuccino muffin. We didn't buy it but I have been thinking of these muffins ever since. I searched the net and couldn't find anything even similar. Does anyone have a recipe for something like this? I'm sure it has baking chocolate and freeze dried espresso powder in it but I can't figure it out otherwise. Any help would be appreciated.
