ISO: macayo's carnitas

Misc.
I'm looking for a recipe for carnitas like Macayo's. I know it is a "secret" (I worked at Macayo's for a brief period and the carnitas were made at a central location and then shipped to stores). I have tried several of the internet recipes and find they aren't the right kind of sweet and too greasy. I am leaving for a 2 year contract overseas and would like to make some myself!
