BROWN SAUCE
2 tablespoons butter
1 slice onion
1/8 teaspoon freshly ground black pepper
2 tablespoons flour
1 cup beef stock (homemade, canned or from bouillon)
salt (to taste)
Melt the butter in a sauce pan and add the onion slice. When the butter is barely brown, stir in the pepper and flour and cook slowly until the flour is brown.
Gradually add the stock, stirring and boil gently for 1 minute.
Remove the onion slice. Add salt; turn the heat to simmer and cook 15 minutes. Add more liquid if the sauce is too thick.
