ISO: Make ahead mashed potatoes

Hi, I am like you searching around for a make ahead mashed potato recipe without all the extra cheese calories! I guess I will have to use my old standby trick.......I normally boil my potatoes and mash them before or while I am making the the gravy and someone else is carving the turkey. I have always had the best luck if I mash and then beat them with enough milk to make them fluffy and add about 2Tbsp of butter. I beat air into the potatoes by using a hand mixer. (using uncoated stainless pot helps so you can beat them in the pan they were cooked in.) Place mashed potatoes into a microwavable casserole dish and dot the top with butter. You can set them aside for about 20 minutes or so. Once the rest of the food is prepared and just before serving the meal, pop the potatoes into the microwave for approx 2-3 minutes on high to have them hot and fluffy. The only bad thing is the dish is really too hot to pass without hot pads!
