Recipe: Sister Kathy's Grilled Brownies and Double Chocolate Brownies

1 1/2 sticks butter (3/4 cup), melted
5 heaping tablespoons unsweetened cocoa powder
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
2 cups white granulated sugar
4 eggs
1 1/2 teaspoons vanilla extract
In a saucepan over medium heat, melt the butter, then add the cocoa powder, mixing well. Remove the pan from the heat.
In a separate mixing bowl, combine the flour, baking powder and salt. Add the sugar, eggs, and vanilla to the cocoa and butter, mixing thoroughly. Gently stir in the dry ingredients. Don't overmix the batter, or the brownies will be tough. Pour the batter into a greased and floured 9x13-inch cake pan.
Grill the brownies for 30 minutes at 350 degrees Fahrenheit. Remove and let cool for one-half hour.
DOUBLE CHOCOLATE BROWNIES
1 cup butter, melted
4 eggs
1 cup brown sugar
1 cup white granulated sugar
1 teaspoon salt
1 teaspoon vanilla
1 1/2 cups flour
4 cups of semi-sweet chocolate chips, divided use
Combine the butter, eggs and sugars until well blended. Mix in the salt and vanilla. Stir in the flour, being careful not to overwork it. Stir in two cups of the chocolate chips.
Spread the batter in a greased and floured 9x13-inch cake pan. Next, the remaining two cups of chocolate chips go directly on top of the batter.
Place the pan in a preheated 350 degree Fahrenheit grill, using the indirect grilling method. After 35 minutes, check the brownies with a toothpick. If some of the wet batter comes up along with the melted chocolate chips, close the lid and give it another 10 minutes. Remove and allow to cool.
