ISO: make ahead mashed potatoes WITHOUT sour cream or cream cheese

I have found lots of recipes for make ahead mashed potatoes but I want one for plain potatoes with just milk and butter. Can I make them ahead and reheat them while I'm making gravy and carving the turkey? I'm always afraid they will dry up. Anybody have any suggestions or done this. I would even like to do them the day before or in the morning of Thanksgiving. Thanks everyone.
