ISO: Mexican Cooked Carrots

I'm looking for a recipe for Mexican cooked carrots. I know they are boiled in water and vinegar, maybe some onion. I don't know the portions of vinegar to water, etc. or whatelse is needed. Can you help? Any help would be appreciated. Also, if you have a great recipe for carnitas?
