GARDEN LOAF
"Carol Ferguson's Carrot and zucchini loaf is moist and spicy"
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
2 eggs
3/4 cup granulated sugar
1/3 cup vegetable oil
3/4 cup grated carrots
3/4 cup grated zucchini
1/2 cup raisins
Stir together flour, baking powder, cinnamon, baking soda, salt, nutmeg and allspice; set aside.
Whisk together eggs, sugar and oil; stir in carrots, zucchini and raisins. Stir into dry ingredients just until moistened. Pour into greased 8 x 4 inch loaf pan.
Bake in 350 degree F oven for 50 to 60 minutes or until tester comes out clean. Let cool in pan on rack for 15 minutes; turn out onto rack and let cool.
Makes 1 loaf or 12 slices
