Recipe: Filipino Stir-Fried Noodles with Eggplant (using Ramen noodles)

FILIPINO STIR-FRIED NOODLES WITH EGGPLANT

"In the Philipines, fried noodles, or pancit, is a popular dish"

2 packages (3-oz. each) dry Ramen-type noodle soup, uncooked
1/4 cup vegetable oil
3 small Japanese eggplants, peeled and halved horizontally
1 large onion, thinly sliced
2 teaspoons minced garlic
1 tablespoon soy sauce or tamari
1 pound spinach leaves, torn into large pieces
1 teaspoon Asian sesame oil
2 teaspoons sesame seeds
wedges of lime (for serving)

In a large saucepan filled with boiling water, cook ramen noodles according to package directions, about 3 minutes. Do not add seasoning packet. Drain, reserving 1 cup cooking liquid. Set aside.

In a large frying pan, heat oil over medium heat. Add eggplants and cook, stirring, until softened, 3 to 4 minutes.

Add onion. Cook, stirring occasionally, until onion is softened, 2 to 3 minutes.

Add garlic, soy sauce, and spinach leaves. Cook until spinach wilts, 2 to 3 minutes.

Add 1/2 cup water and seasonings from ramen noodles. Cook, stirring, until well blended, 1 to 2 minutes.

Add cooked noodles and heat through, stirring occasionally, about 3 minutes

Transfer to a serving bowl and sprinkle with sesame oil and sesame seeds. Serve immediately with wedges of lime.

Makes 4 servings
