ISO: Mimi's restaurant huevos y pappas with diablo potato cakes and tomatillo sauce

Mimi's restaurant has the most delicious huevos y pappas with diablo potato cakes and tomatillo sauce. I have looked high and low for a recipe for these potato cakes which are made of mashed potatoes colored slightly pink from some kind of spciy sauce. They also have bits of vegetables (corn). It appears that the cakes are breaded and fried (or maybe baked?).

Any ideas?
