ISO: need a couple Tex Mex recipes

Misc.
I moved to California and there is nowhere to get Tex-Mex. I would like a Chicken enchilada with sour cream sauce recipe....such as El Chico's - what they mix with the chicken and how the sauce is made. I would also like the queso and salsa recipes if anybody has one like ElChico's or Tia's...then I can fix my own Tex-Mex here in Cali.
