ISO: Need easy recipes for one Army wife...

My husband has been deployed since 12 Dec 2002, and I am so tired of eating "convenience foods." Does anyone have any easy, quick recipes, esp. meatless or using skinless, boneless chicken breasts? It's just me here, and I work and go to college, so I'm not home enough to put together a complicated meal, but I would like something other than, and healthier than, a frozen pizza or a corndog. =) Thanks for your help!
