Cooking for one sometimes seems difficult or hardly worth it but if you think of it as making more than a meal,it makes for an easier and healthier week.

Cajun chicken breasts:

Sprinkle cajun seasoning on chicken breasts[can pound them if you like or leave plump],but do use boneless,skinless breasts. Bake 350 degrees for approx. 25-30 min. till inside is no longer pink. The time will depend on whether the breasts have been pounded or not. When done, slice and serve. Leftover breasts can be put over a salad,in a sandwich, served in a soup,etc... Do make more than one breast though,so you'll have leftovers. That's the key to cooking for one.
