Recipe: RoTel Spicy Meat Loaf (using bread, onion and chili powder)

ROTEL SPICY MEAT LOAF

1 1/2 pounds ground beef
3 slices bread, torn into small pieces
1 small onion, chopped
1 (10 ounce) can RoTel Diced Tomatoes and Green Chilies
1 egg
2 teaspoons chili powder
1/4 teaspoon ground black pepper
1/3 cup chili sauce (or catsup, for topping)

Preheat oven to 375 degrees F.

Combine first 7 ingredients. Spread into an ungreased (8x4x2-inch) loaf pan.

Bake 1 hour; drain excess drippings. Spoon chili sauce over cooked meat loaf; bake 15 minutes longer.

Makes 8 servings
