ISO: NY Italian Bakery Cookies - raspberry jam or chocolate filled

Hi - I have been searching for a few years now of a recipe for the cookies you would get from a NY Italian bakery. They are long sandwich cookies with either raspberry jam or choclate in the middle. Sometimes one end is dipped in chocolate and then jimmies (sprinkles) Sometimes they are just dusted in powdered sugar or a little chocolate. They are dry and have almost a "sandy" texture when you bite into them. I've tried so many recipes and have never been able to find a good one.
