Recipe: Grateful Caravan Wings (using lemon, lime, and orange juices)

1/2 cup olive oil
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh parsley
1 small onion, diced
1 tablespoon (5 cloves) finely chopped fresh garlic
juice of 1 lemon
juice of 1 lime
juice of 1 orange
2 tablespoons ground cumin
3 teaspoons hot sauce
1 teaspoon garlic powder
1 teaspoon onion powder
20 wings, trimmed and separated
In a large mixing bowl, combine the olive oil, cilantro, parsley, onion, garlic, juices, cumin, hot sauce, and garlic and onion powders. Add the wings to the marinade, coating them thoroughly. Marinate in the refrigerator for 2 hours.
Preheat the oven to 375 degrees F.
Remove the wings from the marinade with tongs and place on a 2 inch deep baking dish, separating them evenly.
Bake for 25-30 minutes, basting continually with extra marinade, until crispy, brown, and cooked through. Check the wings every 10 minutes while baking to avoid burning and sticking.
