ISO: Offal Recipes?

Howdy everyone!
I'm looking for offal recipes that aren't awful...ha, ha, ha.
I've enjoyed "variety meats" all my life, but now I'm on the lookout for new things to do with all the lovely bits and pieces that no one else seems to want.
I've looked online and can barely find anything, most of what I can find being recipes I already use (eg. brains + scrambled eggs). I do plan to try to find some cookbooks - if any exist - but in the meantime, if anyone out there has any nice recipes or knows of some wonderful (but apparently hidden) websites, I'd really appreciate being the recipient of this knowledge!
