ISO: Pimento Cheese - Calling all Southerners!

I was just in Atlanta for a visit, and tasted "pimento cheese" for the first time - mmmm, was it good! I was told that pimientos are a type of roasted pepper. Does any Southerner out there have a good recipe for it? And are there ways to use other than as just a spread for crackers? I'd love to make the cheese and try some recipes. Thanks--
