Recipe(tried): Pimento Cheese

Maureen, there are so many pimento cheese recipes that you can choose from..this is the one I make for my family..You will find it very easy. Once you try it you will be able to create a recipe to your own liking.

PIMENTO CHEESE

8 ounces Sharp cheddar cheese, grated
4 ounce jar chopped pimento, drained
1/2 cup pimentio stuffed olives, chopped
1/2 cup dry roasted peanuts, chopped
3/4 to 1 cup mayonnaise
1/2 teaspoon liquid smoke

Combine all ingredients together and add exta mayonnaise if needed to spreading consistency.

Sometimes I add a dash of sugar and a couple of dashes of hot sauce.

Basic pimento cheese recipe:
Mix the cheese, pimento and mayonnaise and omit all the other ingredients that I have listed.
