ISO: Plantain Soup

Hi Group,
I'm originally from Miami Fl. My great grandmother passed away several years ago, and sadly never used a cookbook, and never had a personal list of her recipes either. She was a wonderful cook, and the smells coming from her kitchen were incredible.
She used to make a Plantain Soup, keep in mind that she was Cuban, and I remember it also had chunks of chicken in it as well. It had a thick broth, and was a deep golden color.
I'm pretty sure that Saffron was one of the ingredients. Does this sound familiar to any of you? If you have the recipe, please share it here. Many thanks to all of you, for the great recipes contained on this website.
