HIGBEE MUFFINS

"This recipe is actually from a restaurant that used to be local and people would go there just to get the muffins."

10 tbsp shortening
1 cup sugar
2 egg yolks
4 cups flour
2 tbsp baking powder
1 tsp salt
2 cups milk (or as needed)
2 egg whites, beaten stiff

Cream together shortening, sugar and egg yolks.

Combine dry ingredients; add to mixture alternately with just enough milk to moisten (do not beat). Fold in egg whites. Put in 24 greased muffin tins.

Bake at 400 degrees F for 20 minutes.
