ISO: Please help me configure this recipe for Macaroni and Cheese!

Hello! I am writing to ask advice on how to compile a ingredients my family uses for mac and cheese. Its a bit unconventional, but I love it, the problem is, it yeilds a massive amount of food. When I try to halve the recipe, the results are often horrendous as the ratio is often off. My aunt uses the following ingredients in her mac and cheese:

Celery
Onion
Bell Pepper
Mayo
Sour Cream
Cream of Mushroom Soup
Eggs
Milk

Colby Cheese
Mozzarella Cheese
Cheddar Cheese
Jack Cheese

The problem is, when I halve the recipe, it often ends up with an odd uneven ratio of soup or cream cheese to cheese.
Is there anyone out there who can somewhat provide some general,generic ratios of ingredients? For instance, 1 cup cheese per 8 oz of liquid or what have you... Thank you!
