Spoon Bread (using corn muffin mix)

2 eggs, beaten
1 (8 1/2 oz.) pkg. corn muffin mix
1 (12 oz.) can creamed corn
1 (12 oz.) can corn, drained
1/4 cup margarine, melted
1 cup sour cream
1 cup shredded Cheddar cheese

Preheat oven to 350 degrees F.

Combine the first 6 ingredients; stir well. Spread into a lightly buttered 11x7-inch baking pan.

Bake at 350 degrees for 35 minutes.

Sprinkle cheese on top; return to oven until melted.

Servings: 6
