Recipe: How to Mix Biscotti Dough in a Bread Machine

HOW TO MIX BISCOTTI DOUGH IN A BREAD MACHINE

Mixing biscotti dough in a bread machine is easy and fast, and cleaning up is oh, so quick, It doesn't matter what size machine you have, a 1-pound, 1 1/2 or 2-pound. You only mix the ingredients in the pan during the first part of the dough or manual cycle.

Combine the dry ingredients in a large measuring cup so they are ready to pour into the pan as mixing continues. Keep the top open and add ingredients while the paddle is going, being careful to not spill any into the baking chamber.

1. Place eggs, sugar, and vanilla in the pan and set the pan in the machine. Select the dough or manual cycle, depending on your unit. Start and mix for 5 minutes (after a preheat cycle on some machines). Check the mixing cycle timing in your instruction book.

2. Add the flour and other dry ingredients to the pan and let the machine mix another 4 minutes or until dough forms.

3. Add nuts, raisins, or dried fruits and continue to mix until all are incorporated into the dough, about 3 minutes. Use a rubber spatula to push the dry ingredients into the mix if they adhere to the pan's sides.

Total mixing time in most machines is 10 to 12 minutes in the dough cycle. Turn off or unplug the machine, remove the pan from the machine, and remove the dough from the pan. If the dough is sticky, coat your hands lightly with vegetable oil or nonstick vegetable spray. Follow biscotti recipe directions for shaping, baking, and toasting.
