ISO: Pollo Tropical yucca bites

Just went to "Pollo Tropical" restaurant and had the most awesome fried yucca. They are fried yucca balls filled with cheese inside and they serve them with a garlic-cilantro sauce. They are great!
Anyone have a clone recipe for both of these?
