Have you ever tried Polaner's Strawberry Preserves? They do not use sugar - sweetened with fruit juice only. Very good. But if you want to try making some at home, you might try taking fresh strawberries and some fructose (allowed in moderate use for diabetics) and cook over low heat until thickened. Do not use Aspartme because it is not meant to be heated.
