Recipe(tried): Applesauce-Pecan Gift Loaf (using candied fruit, 1970's)
Breads - Muffins, Quick BreadsThis bread will make a very nice (Thanksgiving or Christmas dinner) hostess gift.
APPLESAUCE-PECAN GIFT LOAF
2 large eggs
1 cup applesauce (from a jar)
1 cup white granulated sugar
1/3 cup vegetable oil
3 tablespoons milk
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon, divided use
1/2 teaspoon baking powder
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 1/4 cups finely chopped pecans, divided use
1/2 cup mixed candied fruit
1/4 cup firmly packed light brown sugar (for the topping)
Confectioners' sugar (optional, for dusting top)
Candied green pineapple and red cherries (optional, for decorating)
Beat eggs until foamy. Stir in applesauce, white sugar, oil and milk; set aside.
Mix flour, baking soda, 1/2 teaspoon cinnamon, baking powder, nutmeg and salt. Gradually add to the first mixture, beating with spoon until well mixed. Stir in 1 cup pecans and candied fruit. Spread in a well greased 9x5x3 inch loaf pan.
Mix remaining 1/4 cup nuts and remaining 1/2 teaspoon cinnamon with brown sugar. Sprinkle evenly on top of batter and press lightly with hand.
Bake in a preheated 350 degree F oven for 1 hour or until done. To keep top from getting too brown, spread a piece of foil over top during last 1/2 hour of baking. Turn out on rack, turn right side up and cool.
Wrap in foil and store in the refrigerator. Will keep about 1 week. Can also be frozen.
Sprinkle with confectioners' sugar, if desired. Decorate with candied fruit.
