ISO: Recipe for Parsley Jelly/Preserves

My family are fanatics for parsley. My mother has been canvassing her British friends/family for a recipe for Parsley Jelly to be used in the same vein as a mint jelly would be. She makes traditional jams/jellies without the use of Pectin, however I think she would forego this just to have her parsley addiction fed into. Any thoughts would be appreciated.SandiB.
