ISO: Recipes Using Homemade Vinegars (no salads)

Misc.
I enjoy making my homemade vinegars: basil, rosemary, tarrgon,
thyme, lemon thyme - and combinations. What I need are ideas
to use up this wonderful bounty, besides 2T. a day on a salad.
I have even made blueberry vinegar, Its interesting with chicken.
