ISO: Roasted Red Pepper and canned diced tomatoes recipes

Misc.
Can anyone tell me how to preserve roasted red peppers besides freezing them??? Our family enjoys eating them on sandwiches and using them in omelets and etc. I roast and clean them and toss them in minced garlic and EVOO...then freeze.

Also wondered if anyone had a recipe for canning diced Roma tomatoes in pint jars?
