Makhani sauce is made by heating and mixing butter, tomato puree, and various spices, often including cumin, ground cloves, cinnamon, coriander, salt, pepper, fenugreek leaves and heavy or whipping cream.
Start with canned tomato puree or substitute canned crushed tomatoes, probably about 15 to 20 oz. The sauce will be mostly this ingredient. I'm thinking a tsp of cumin, 1/4 tsp ground cloves, 1 tsp cinnamon, 1/2 tsp pepper, 1 tsp ground coriander. Add a couple Tbsp. of butter and finally add the cream until the color is the orange color you are looking for. Add salt to taste.
The chicken is just diced chicken breast marinated for a couple hours in plain yogurt and garam masala and other spices like cumin, coriander, turmeric (adds yellow color), garlic, ginger, salt and pepper. Hard to go wrong unless you start adding several teaspoons or tablespoons of spices. Just give the chicken a good sprinkle.
