ISO: roasted russett potatoes.......peeled and with a taste of vinagar

We ate dinner in a diner in Deerfield Beach, Fl. and could not get the chef to give us this recipe for roasted potatoes with a taste of vinagar.........it was a secret! Please help! They were peeled russett or idaho potatoes.quartered lengthwise! Thanks!
