Recipe: Microwave Chicken Stock
SoupsMICROWAVE CHICKEN STOCK
3 lb chicken parts
4 cups water
1 carrot, chopped coarsely
1 small onion, quartered
2 stalks celery, chopped coarsely
1/2 cup minced fresh parsley
1 bay leaf
1/4 tsp dried thyme
4 peppercorns
Place all of the ingredients in a 3-quart microwave-safe bowl.
Cover and cook in microwave on high power for 20 minutes; skim.
Cook for on medium power for 1 hour.
Strain.
Makes 3 cups
