Recipe: Irish Oatmeal with Dried Fruit and Honey

IRISH OATMEAL WITH DRIED FRUIT AND HONEY

2 cups apple cider or juice
1 cinnamon stick
1/4 teaspoon salt
1 cup Irish oatmeal
5 ounces dried peach, apricot, and pear halves (about 1 cup) in any combination, cut into 3/8-inch dice
honey or dark brown sugar (optional)
1/2 cup low-fat milk, warm

In a heavy saucepan, bring 2 cups water, the apple cider, cinnamon stick, and salt to a boil. Add oatmeal; stir until smooth, and return to a boil. Lower heat and simmer, stirring occasionally, for about 30 minutes.

Remove saucepan from heat. Discard the cinnamon stick and stir in all but about 1/4 cup of the dried fruit.

Divide oatmeal among 4 bowls and top with honey, if desired. Garnish with remaining fruit; serve with warm milk.
