Recipe: Chocolate Chocolate Chip Muffins (using oil and milk, King Arthur flour recipe)

CHOCOLATE CHOCOLATE CHIP MUFFINS

1 3/4 cups Unbleached all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
2 eggs
1/2 cup vegetable oil
3/4 cup milk
1 teaspoon vanilla

Preheat oven to 400 degrees F. Grease 12 muffin pan cups.

Blend together thoroughly the first six (dry) ingredients and mix in the chocolate chips.

In another bowl, beat the eggs, oil, milk and vanilla together. Add the wet ingredients to the dry, all at once, and mix together until just blended, about 20 seconds. Don't overmix. Spoon mixture into greased muffin cups.

Bake for about 20 minutes.

Makes 1 (9-inch) loaf
