ISO: SOUL FOOD

I'd like some authentic "soul food" recipes such as collard greens, black eye peas and ham hocks, fried chicken and/or catfish. Desserts too if possible or a good referral as to where to obtain such recipes. I am Italian and had a taste of such food in South Carolina once and loved it! Thanks.
