Recipe: Swedish Macaroons (Grandma Rose)

Desserts - Cookies, Brownies, Bars
SWEDISH MACAROONS

1 1/3 cups finely ground blanched almonds
1 1/2 cups confectioners' sugar
Grated lemon rind
Dash of salt
2 egg whites

Preheat oven to 300 degrees F. Grease cookie sheets.

In bowl, mix together almonds, confectioners' sugar, lemon rind and salt. Add egg whites. Mix. Force dough through star-tipped pastry bag onto cookie sheet.

Bake for 30 minutes or until light golden brown outside but soft inside. Remove from cookie sheet while still warm.

VARIATION:
To make these cookies Christmasy, decorate them with red or green cherries or a whole blanched almond.
