ISO: Re: ISO: SOUL FOOD

Misc.

Here's another one: this time from my mom's old recipe collection:

Blackberry Dumplins

1-2 quarts of canned blackberries or fresh, stemmed and cleaned berries
1-2 cups of sugar (more less depending on taste)
2-3 cups of water (if using fresh berries)
One batch of dumpling batter - or in a pinch use tinned biscuits*

In a large pot, combine berries and juice/water and sugar. To keep the berries from being broken up and making a mush...stir gently over medium heat to dissolve sugar. After sugar is dissolved, bring to a boil and add dumpling mixture on top..cover tightly with a lid, and turn down to simmer. Simmer until biscuits are big and fluffy (about 10-15 minutes). Serve hot with a bit of canned milk or fresh cream.

*You can use any packaged dumpling or biscuit mix. My mom had her own knack for making biscuits and would sometimes used tinned biscuits if she ran short.

Other berries could be substituted..although we have found raspberries break up easier than blackberries. Possibly cherries could be used if the fruits were quartered..but its more impressive using blackberries.
