ISO: Stuffed Chicken Thighs

I am searching for a recipe for stuffed chicken thighs, popular in South Louisiana. I know that the stuffing is a simple one of onion, bell pepper and garlic, but I cannot remember if there is a need to marinate before cooking. Hoping some cajun cook out there can help me out.
